  1. That sounds really interesting and delicious! I’ve been eating salad at lunch times for years. It’s easy to have lots of colour on your plate. Thank you for the info on cold potatoes, When I was following my levels closely I noticed that potatoes caused problems. I don’t really like potatoes much anyway, but I do enjoy potato salad. It’s lovely to read how much progress you’re making!

  2. If you can find the purple potatoes, they taste slightly different. I like them better. I have found that sweet potatoes taste good cold, too, if you have glycemic problems with them. There are other foods that are insulin resistant if eaten cold. //en.wikipedia.org/wiki/Resistant_starch
    It’s been a miracle how much better I’m doing. We praise God for it, and I wake up thanking Him every day!!
